ORGANIZATION OF ROADSIDE DINERS FOR TRAVELERS IN THE CENTRAL PROVINCES OF RUSSIA IN THE 19TH – EARLY 20TH CENTURY

Abstract. Regular eating is one of the basic vital human needs. Therefore, providing food becomes the key to sustainable life. At the same time, being on the go often creates some difficulties in providing the traveler with food. This article describes the types and locations of various roadside food establishments, the range of dishes offered to those who went on business or traveled in various directions from Moscow and other regions of Russia. A person goes on a long journey for various reasons: personal or family circumstances, public and political affairs, business trips, for trade or job hunting, to see new places, pilgrimages to holy places, etc. In parallel, appropriate infrastructure was developed to meet the food and shelter needs of the travelers. The quality of service and cooking varied significantly depending on the category of the institution and its location. The assortment of dishes mainly consisted of dishes of Russian cuisine, although in some places there were borrowings from European gastronomy. In a number of settlements, some scarce products were purchased elsewhere. For certain categories of travelers, especially rich people, some eating houses had special meeting procedures to ensure the attractiveness of the place and to make the guests spend more money. Despite the availability of roadside food outlets, some travelers preferred to take home-cooked food on the road. Thus, they reinsure themselves from potential surprises that could limit the opportunities to eat normally on the way.
